What to do With a Hubbard Squash

According to my wife, Alice, her mother used to take the Hubbard squash and heave it down on the driveway to break it up into pieces and then bake the pieces in the oven.  As many times as we see Hubbard squashs at produce stands, we have never eaten one since we have been married.   My sister, Judy,  found a better use for the Hubbard squash than attempting to cook and eat it.   See the attached pictures of her squash sculpture.   She said that it is so darned hard that her pumpkin carving tools were useless.  She had to resort to a Dremmel tool to do the carving.

2021 Mahi Pumpkin

Update, Judy just sent me a picture of what Halloween 2021 will look like. She lives in Florida now and works in a seafood shop. She modeled her latest sculpture after Mahi Mahi.
